This months Recipe:- King Prawn and Sea Bass Brochettes with Ginger Makes 4 brochettes 16 king prawns 4 sea bass fillet each cut into 4 pieces 500gr peeled cherry tomatoes spoon of sugar chopped ginger white wine lemon juice olive oil wine vinegar seasoning basil small buch of rocket Peel the prawns, and make up the brochette alternating 1 piece of seabass with 1 king prawn. Until you have 4 pieces of each, on each skewer. Make marinade with lemon juice ginger white wine , vinegar oil and seasoning whisk. Season the brochette and marinate for about 10 mins. Cut the cherry tomatoes in half squeeze them to remove any excess water and seeds, fry with some oil, add the sugar. Season and add splash of vinegar. Cook for about 5 min. Fry brochette in hot oil take care it does not stick. Deglaze with the marinade, and place in oven for a few minutes. Meanwhile add some chopped ginger to the cooking juice to make a sauce. Place the brochette onto a plate sprinkle with the sauce. Garnish with the cooked tomatoes, and some fresh basil leaves.
